Paleo Oven Baked Halibut fillet with herbs and olive oil

Ingredients

Yields: 4

4 fillets Halibut
1 yellow onion
3 firm tomatoes
2 tsp Fresh parsley
1 tsp dry Tarragon
1 tsp dry Thyme
Olive oil
Salt and pepper, to taste

Directions

  1. Preheat oven to 450°F.
  2. Make small aluminum foil trays sized to fit each fillet.
  3. Wipe the bottom of each tray with olive oil.
  4. Place a fillet of halibut in each tray.
  5. Mix olive oil with chopped parsley, tarragon, and thyme until well combined.
  6. Spoon about 1 tablespoon of the herb mixture over each fillet.
  7. Top with thin slices of tomato and onion.
  8. Broil for 5 minutes.
  9. Carefully turn each fillet over, keeping the melted herb mixture in place.
  10. Broil for another 5 minutes.
  11. Remove from oven and serve hot, pouring the remaining herb sauce over each fillet.
